I used to despise salads. I had no desire at all to eat one. I mean, I’m not a rabbit, so why would I want to eat a bowl of lettuce, right??
My Junior or Senior year of high school, my friend and I went to Ryan’s, a local buffet style restaurant at the time. (They are now closed). She got a plate of lettuce and got this “thousand island dressing.” I was going to pass on the salad and just get all the carbs: rolls, macaroni, potatoes, throw in some chicken for my protein and call it a day. I happened to mention to her that I didn’t like salads. Truth be told, I had never actually tried one, so I can’t say for sure I “didn’t” like them. She said the only dressing she liked was “thousand island.” Okay…. It still involved rabbit food. She then went on to explain that the dressing was like the Big Mac sauce. OH……. Really….??? I had to ask her if she was sure, since you know, everyone lies about what salad dressing tastes like. Insert eye roll here. I then decided to get a (very) small plate of lettuce and said salad dressing. If I didn’t like it, I wasn’t out anything. I could easily go back and get additional food that rabbits didn’t enjoy. We then sat down and I tried this salad thing that I was certain I wouldn’t like, but hey, at least I tried it!
Low and behold….. It wasn’t terrible! The dressing did taste like Big Mac sauce. She wasn’t wrong. I even had tomatoes on the salad and I ate it all. Needless to say, I was quite proud of myself for trying something new and actually eating an official salad.
Years later, thousand island dressing is still my favorite dressing. I haven’t eaten a lot of salads still, but when I do, I know my go-to dressing.
More years later, I got married and my husband and I started looking at ingredient labels on food. HOLY MOLY!! All those big words were ingredients. Fructose this. Fructose that. Syrup here. Dextrose there. I would eat salads every now and then, but the dressing premade from the store had so much “extra” stuff in it. I got to thinking that I could probably just make my own. It would have more “real” ingredients and less fillers. It may also be cheaper and would definitely be healthier.
I found this recipe online and have made it several times. It turns out great and is so easy, just 3 ingredients.
I am cautious about the 3 ingredients and am sure to read labels to see exactly what I’m using. It took some time the first shopping trip, but I felt better knowing the ingredients I was using and having less crap ingredients, as we like to call the added ingredients.
